Plants & Fage

It’s been about 60 days since I jumped onboard the hubby’s train to a Plant Based Diet.  Blog here.  The goal is to fuel my body so it recovers quicker. take me further. and faster. I didn’t mark it on the calendar.  I didn't think it would be very difficult.

And it's not.  Except I cannot consume large amounts of soy. so no tofu or soy yogurt.  I lost my thyroid due to cancer and am on replacement therapy.  Soy interferes with thyroid medication.  Coconut yogurt is super yummy.  Like eating dessert.  For two plus months I’ve been eating yummy little containers of plain coconut yogurt. Once or twice a week. when I crave my normal daily lunch feast of Fage yogurt. 

Here’s the problem.  Not that much protein in those little containers.  And no probiotics either.  Yet I didn’t let that stop me.  For 60 something days.  I eat a lot of leftovers for lunch.  and veggie sandwiches on chia bread. and spinach/kale salads. and avocado. lots of avocados.

My breakfast is pretty much the same every day.  Not boring.  So delish.  Hubby bought a Vita-mix.  So I have a  perfectly mixed spinach, kale, half an apple, half a banana, spoonful of rice protein, Chia seeds, spoonful of frozen OJ, and a couple ice cubes with water as a base GREEN SMOOTHIE. When the hubby makes it, he uses almond milk as the base and adds frozen grapes.  It does not taste like salad.  Yet I feel as good as eating a big salad.

Dinner is whatever recipe my husband decides to spend 3 hours in the kitchen preparing.  That’s what has made it easy for me.  I have no time. Or patience. Or desire. To spend in the kitchen.  He doesn’t seem to mind.  I’d eat veggie sandwiches on chia bread. or have an acai bowl nightly if I had to be in that kitchen.


Dinner: Risotto with sun dried tomatoes and mushrooms


The 3 kids are pretty much on board.  Well the little one loves grilled cheese.  But he also loves vegan chili.  
Yet I noticed after a hard run I couldn’t stop thinking about fish.  Like I dreamt about it with drool hitting my pillow.   So I decided that every once in a while I would get off the train for a tour.  Of fish.  Or chicken. Not that often.  Once every 10 days. Or Two weeks.  And when I get that little tour, I don’t dream or drool over the thought of fish. Or chicken. Salmon or Ahi.  Grilled chicken.  I'm not talking fish and chips. or KFC. 

The hubs says he can’t get off the train.  Apparently I have much greater will power than him.  He thinks if he gives himself an out once in a while, he’ll go onto another track.  Props to him for knowing his limits.  And as much as he is onboard with the plant based diet, he is worried about me.
He thinks I don’t eat enough.  According to my size 2 jeans, I do! But I have had health issues.  So he encouraged.  And then bought a tray of Fage yogurt at Costco.  So I guess I am no longer plant based.  I get my probiotics. More protein.
Lunch is a no brainer again.  Fage. Hummus.  Pita chips. Fresh cut veggies.  

I still feel clean. And healthy.  And better than I did 60 something days ago.



My mileage is the same.  as it's been most of the year.  Plagued with injuries.  40 miles a week is normal now.  Miss my 60+ mile weeks.  One day they will come to me again.

Interestingly enough.  after eating clean. The thought of a donut on National Doughnut Day grossed me out.  I had no desire for one.  Now if it has been National Frozen Yogurt -with -toppings -on- top Day…maybe.
